As I have entered in to this season of “all things new”, I decided it was time to take control my family’s poor eating habits. In the midst of four crazy years, working too much, homeschooling and trying to do all the things we are supposed to do, I made very bad choices in food, for me and my family. Some of us are feeling the effects of these years of bad eating. So, now that I am home, it is time to change! Not just eat better food, but work at eating food that reverses some of the damage that has been done.
I began researching this good food and trying to work out a better plan for our eating. I happened upon two ladies who have helped many others with this same problem. They work under the name, Trim Healthy Mama! After everything I have researched, I really like what I found with them, and felt like it was something we could do in our house. Well, in the first two weeks, we are feeling better and getting smaller!
One of my favorite benefits of this new way of life is trying new recipes. One day last week, my 10 year old, absolutely begged me for chicken nuggets. She was adamant they had to come from a particular fast food restaurant, they could not be homemade. After seven whole days of no fast food, she was truly, almost in tears begging. I came home and started searching for a Trim Healthy Mama worthy recipe…and much to EVERYONE’S surprise, I found a great one! Over at Mama Shire’s blog, she posted this incredible recipe she calls, Lazy Grain-Free Chicken Nuggets.
I did have to make one little adjustment. I did not have any coconut flour, so I used half and half, almond flour and ground flax. I tell you what…these nuggets were absolutely delicious. All five of us thoroughly enjoyed them…and, my family all ate a very good helping of ground flax…which is one of those great foods I read will reverse damage. I call that a win for mom!! Thank you Mama Shire! This will become a regular for our family for sure!
